Chilli and caper prawns with coriander and pickled black peppered mango

Chilli and caper prawns with coriander and pickled black peppered mango

(Serves 6)

Luscious Mediterranean Prawns

12 large Mediterranean prawns, de-veined

3 cloves of chopped garlic

½ thinly sliced red chilli

1 tbsp. of capers

1 tbsp. of chopped fresh ginger

1 handful of chopped fresh coriander

1 tbsp. extra virgin olive oil

 

Pickled Mango

3 freshly cubed mangos (firm not too ripe)

2 tbsp. of finely chopped red onion

3 tbsp. of Dufrais white wine vinegar

2 tbsp. honey

½ tsp. coarse ground black pepper

1tbsp.n light olive oil

1 tbsp. lemon juice

 

In a medium sized pan, heat oil, pepper and onions and cook till translucent. Then add the Dufrais vinegar, honey, lemon juice and mango and cook for 3 minutes and leave to cool for 1 hour.

 

Gently heat the Olive oil in a wok and add the garlic, chilli, capers, fresh ginger and half of the chopped coriander until translucent don’t over heat. Add the prawns and cooks until they turn from blue to pink, then they are cooked. Place to the side.

Serve 2 large prawns with a sprinkle of fresh coriander, along with the pickled Mango and a pinch of rocket.
