Pickled red cabbage, cranberry, apple & feta puffs

Pickled red cabbage, cranberry, apple & feta puffs

1 teaspoon olive oil,

1 red onion sliced,

1 medium apple sliced,

1 small red cabbage sliced,

pinch of salt.

2 cups of cranberries,

2 cups of sugar,

1/2 cup Sarsons Vinegar,

375g puff pastry, 50g butter and 200g Feta. Heat the olive oil and saute the onions and apples for 5ms. Add cabbage, sason with salt for 10ms. Place to side. Unroll pastry and cut puff into 3inch squares, melt butter and coat both sides and place on greaseproof paper on baking tray. Spoon tablesppon of mixture on top, and cut feta into cubes, placing 4 cubes on top of mixture. Cook in preheated oven 180 for 20ms then serve.
