Coq au blanc choc avec gingembre

I know you’ll think I’m barking but seriously, this was divine!! And I have such a cheats way of doing it, coz I came up with the idea late on a Sunday when it was more a question of what have I got in the cupaboards, opposed to what do I need!

2 chicken breasts

100g melted white chocolate (or, if you are a kitchen slut as I am, you can use 1 large tbsp. of white chocolate spread 🙂

1 tbsp. fresh finely chopped ginger (again, I had none 😦 so I used 1 tbsp. of ground ginger)

200ml single cream

1/2 tsp. chopped garlic

1/4 tsp. of fresh green chillies (or dried)

1 tsp. olive oil

1 tsp. salted butter.

1 tsp. Sarsons Malted vinegar

 

Right, on a medium heat add oil, butter,  garlic, chillies and fresh ginger to a pan and cook for 2ms (if using powdered ginger wait until you have the chocolate and cream well mixed). Add the vinegar and stir.

Remove from heat and pour in melted white chocolate or spoon in spread, then add the cream and stir well together, then return to medium to low heat.  Now you can add the powdered ginger and stir. Leave on very low heat for 5ms. Once all the flavours have fused together, take a sieve and remove the bits till you are left with a lovely creamy sauce.

In a griddle (or frying pan) cook your chicken breasts for 4ms each side. When cooked, slice into 0.5cm width strips and drizzle (I love that word!) across and serve with whatever veggies you fancy!
