Summer cod with strawberry, avocado and fresh basil vinaigrette

 

This is a perfect summer dish and I’ve had it hot or cold!

2 cod fillets (or any other fish you might fancy!)

1 avocado

8 strawberries

2 tbsp. Sarson’s malted vinegar

2 tbsp. white wine

bunch of fresh basil

quick splash of worcester sauce

1/2 tsp. coarse ground black pepper

1 pinch sea salt

Make the sauce first. Add all the ingredients into a blender (apart from the fish of course!) and you are left with a lovely creamy vinaigrette.

Either griddle or BBQ the fish, at least 4ms each side and serve with baby leaf and rocket lettuce, or if the sauce is hot it tastes great with asparagus! Garnish and serve!
