Delicious Beetroot Mess

 

340g baby beetroot halved

100g pistachios

1 avocado

100ml single cream

1 tsp. smooth peanut butter

pinch dried red chillies

Pour the vinegar from the baby beets into a pot and heat on medium, stir in the tsp. of smooth peanut butter, once dissolved, add the cream and a pinch of chillies. Once smooth, add the beets, the chopped avocado and finally add the pistachios, cook for 2ms on medium and then serve, adding a few pistachios for colour, with salad, or toast and enjoy!
