Matazaemon Milk Jam

Vinegar  butter

 

‘A nostalgic tasting jam that will make you want to eat more and more bread!’

1 cup of milk

1/2 cup fresh single cream

60g sugar

2 tbsp. Matazaemon vinegar, or Sarsons malt vinegar

Put milk, fresh cream and sugar into a pot and heat at medium heat, and stir constantly while simmering. Use a rubber spatula to stir until it is thick enough for you to see the bottom which should take about 10-12ms.

Remove from heat and add vinegar little by little and then heat again for about 30seconds.

Serve with fresh bread.
