Peaches in parsnip and ginger baskets with nutmeg and rose petals

(serves 2)

4 peach halves

3 tbsp. Mizkan Mirin

2 parsnips

1 tsp. fresh ginger strips

pinch of nutmeg

1 tsp. dried rose petals

pre-heat oven

OK, now I know you may be thinking that this is super weird, but trust me it works! Hell if you can have carrot in cake you can have parsnip in desserts, it’s certainly sweet enough and it tastes really good (as long as you don’t keep telling yourself you’re eating vegetables for dessert!)

With a potato peeler, peel strips of parsnips until all you have a strips. Do the same with the fresh ginger. Arrange in nests and bake in the oven for 30ms, keeping a check that it doesn’t get burnt, but it should be crispy. (yes I know, I accidentally messed up my baskets but you can do better!)

10ms later, place the peach halves in a dish, spoon over the mirin, sprinkle some raw sugar and a pinch of nutmeg and also place in the oven at the same time for 20ms, so they should be ready at the same time.

Place the nests in dishes, and then place the peaches in the centre of each. Sprinkle with dried rose petals and serve with whipped cream.
