Large cup mushrooms stuffed with pickled minted avocado, feta, bacon and pine nuts

Large cup mushrooms stuffed with pickled minted avocado, feta, bacon and pine nuts

Serves 2

2 large cup mushrooms

1 avocado

4 int leaves

1 tsp. Sarson’s vinegar

4 sliced of feta cheese

1 small packet of pancetta

2 tbsp. pine nuts.

Heat oven to 180C

In a pot, add the avocado, vinegar and mint and cook till it’s a paste for 5ms.

In a frying pan cook the pancetta.

Take the large cup mushrooms, chop up the feta and create the first layer. Then spread the avocado mixture. Then spindle the cooked pancetta and spindle the pine nuts.

Cook in a preheated oven at 180C for 30ms then serve.
