Cod with citrus and avocado dressing

OK, so call me weird, but sometimes I like the idea of taking something I don’t actually like and finding a way to make it something that I do. And this time it’s grapefruits turn. I can’t stand the stuff and no matter how I try to acquire the flavour, it doesn’t work for me. BUT, I am also aware that sometimes when you pare something with other flavours it can become a flavour you really enjoy. A bit like my recipe for brussel sprouts, on their own I can’t stand them but with bacon and mango and a kick of chilli they are gorgeous! So, I made the following dressing using grapefruit and it worked for me!

Dressing:

4 tomatoes finely chopped

1 avocado (half chopped, the other half sliced)

1/2 peach chopped

3 spring onions

1 tbsp. Dufrais cider vinegar

1 tbsp. olive oil

1/2 tsp. lemon juice

juice of one satsuma/clementine

good twist of coarse ground black pepper

2 cod steaks

baby leaves salad

6 small cherry tomatoes

Add all the chopped ingredients for the dressing together and mix.

Griddle the cod for 3-4ms each side

Spread the baby leaves on a plate, chop the baby tomatoes in half and place around the plate, and place the sliced avocado around the plate.

Create large flakes of the griddled cod, and spoon the citrus and avocado dressing in 4 places around the plate and serve.
