Paleo Lemon tomato, cashew nut zucchini fettuccine

Do you ever have those days when you crave pure comfort food, well those days I used to have pasta, but I received my new vegetable spiraller and I really wanted to use it. However, like a total plank, and knowing I just didn’t have the time to use the courgettes I had bought, I had stupidly frozen them, and of course, had I not been so knackered, I would have realised that trying to use the spiralled would turn them to mush.

So instead, I cut them into long slivers instead. And I know, they’re not that pretty, but I’m so dead on my feet with moving our office and working through the weekend, it’s a bloody miracle I even managed to cook anything at all!

Especially since being half asleep, I burnt the garlic and chilli first! So my quick meal did drag on a bit! However, it was entirely worth it! And if I hadn’t been so out of it, it would have been really quick!

2 cups of chopped tomatoes

2 tbsp. lemon juice

1 small handful of unsalted cashew nuts

2 cloves of garlic

1.2 tsp. dried red chillies

1 tbsp. Sarson’s balsamic vinegar

pinch of sea salt

good twist of black pepper.

1 tbsp. extra virgin olive oil

2 courgettes

Lightly fry the  chopped garlic and chillies, then add the tomatoes, gashes nuts, vinegar, salt, pepper and lemon and cook for 10 minutes. Then I blitzed it with my hand blender to make it nice and creamy.

Either use a spiraller on an unfrozen courgette, or slice into thin strips like fettuccine. Lightly fry in olive oil for 5 mins, salt and pepper then place on plate, and spoon tomato sauce over top et voila! or however you spell it!

Seriously simple, seriously satisfying and suitable for the whole gambit, wheat-free, paleo, vegan you name it, it’s worth it! 🙂
