Pancetta & Garlic  Mushrooms and mozzarella

Pancetta & Garlic Mushrooms and mozzarella

heat oven to 200

Two beefy mushrooms

2 slices of pancetta chopped

2 tbsp. of Sarsons malt vinegar

1 garlic clove

tbsp. of chopped fresh coriander

2 tbsp. butter

1 cup of grated mozzarella

 

In a bowl mix the chopped garlic, coriander, butter vinegar and chopped pancetta. Take the stem out of the centre of the mushroom, then fill with mixture and sprinkle mozzarella over the top and cook in pre heated oven for 20 minutes.

Quick and so very delicious!
