Griddled Pork in a cransberry, macadamia nut and rosemary sauce

Griddled Pork in a raspberry, macadaemia nut and rosemary sauce

1 cup of macadamia nuts

1 cup of fresh chopped rosemary

1/2 cup of dried cranberries

1/2 cup of apple juice

2 pork chops

sea salt and pepper to taste

Place your pork chops on yoru griddle and cook for 10 minutes, or 15 minutes if you prefer well cooked.

In a pot, add the apple juice, nuts, rosemary and dried cranberries and cook for 15ms, until the nuts are soft. Once they are remove from heat and allow to cool for 10ms. Once cool, take your hand blender and blitz the mixture until you get a lovely red creamy sauce. Taste and add sea salt and a generous sprinkle of coarse ground black pepper.

Serve with lemon courgettes and griddled vegetables.
